Jim Harty insists he’s a dairy farmer, as that is his heritage, but actually he’s one of Ireland most successful oyster farmers, creating this Irish luxury product since 1985 on the beautiful tidal strand at Dungarvan Bay, County Waterford.
Here the nutrient rich waters of the Atlantic and Irish Seas combined with the local rivers and streams surrounding Dungarvan Bay create a sweet and meaty ‘speciale’ oyster that is prized by the French and worldwide markets they now supply.
We had the pleasure of visiting this summer to see the nurseries, the oyster beds, and the purification process that allows this farm to produce finished oysters from seed stock, followed by a civilised three course lunch with the family. Needless to say we came home laden with parcels of their deliciously sweet, saline oysters.
We ate them, as we had earlier in the year on a trip to The Seafood, with hot spicy sausages, and lashings of delicious white wine.Back to Journal
