    Hederman's smoked salmon kimbap with Hederman's smoked chilli omelette

    Serves 4 | Korean/Fusion

    These are both light and rich, sweet and tart and also very satisfying to make. In Korea kimbap are often a packed lunch or picnic dish and contain a wide variety of seasonal things including different vegetables, sea food and meat. In this version the smoked salmon is the perfect smoky sweet foil to the sharp and savoury additions of pickles and crunchy vegetables. A fun way to make this is to arrange all the components and have everyone make their own custom roll. The rolling up part looks like a challenge but as long as everything is packed in tight it should hold. It will taste delicious no matter what.

    Serves 4 | Chinese fusion | Lunch, starter or main course

    The dumplings are tricky on first go but even just folding them over in half will still be effective if you can’t get the folding right. I have used pre–made dumpling wrappers from my local Asian supermarket which I recommend doing as it is quite an involved process to make the dough. There is already quite a bit of work here so save yourself some time and buy these – they live in the freezer section (usually labelled potsticker/gyoza wrappers) and they are always perfect!

    These are inspired by the classic Vietnamese style rolls full of herbs and fresh bright flavours which balance beautifully with the smoky, salty richness of the salmon. Summer rolls are one of my favourite ways to use really crunchy, fresh seasonal vegetables and the ingredients can be changed up depending on what is available. These ones are inspired by my organic vegetable box which had beautiful yellow courgette and cucumber but use your favourite crunchy vegetables to fill this up – carrots, red cabbage, scallions, asparagus.

    Who doesn’t love tacos? These are very quick and easy to make, and so fresh and tasty. Hederman’s Hot Smoked Irish Salmon with chillies is perfect for this type of food. Its ready to go. Simply flake it up and put it in the tacos. Homemade tacos are honestly one of the best things to eat. I really encourage you to make your own tacos, but store–bought will work just fine.
