PRIVATE LUNCH TOURS
These tours are a rare opportunity for a more immersive, behind the scenes, individually tailored experience, hosted privately with Frank or Caroline, who co-own the smoke house, share a commitment to exceptional quality, and have developed the business together over the last 20 years. Frank is in his fifth decade.
You will be able to experience first-hand the atmosphere and activities of a rare, living Irish culinary tradition, and gain an appreciation of the deceptively simple skill of preserving and flavouring food while understanding the challenges and pressures of modern food production and distribution.
You will also gain an insight to the life’s work of one of Ireland’s most renowned food protagonists and, you’ll be able to savour some of the most delicious smoked salmon and seafood you will have ever tried.
These tours are made especially for the culturally curious traveller who has a particular interest in local food, adventurous cooks intrigued by smoking, and smoked food and seafood lovers who enjoy new and immersive eating experiences.
Meet the Expert Appetiser Lunch Tour
Enjoy the wit and wisdom of owner and expert smoker Frank Hederman whose unscripted tours are legendary. A natural story-teller with vast anecdotal local food and history knowledge, you will learn how the smokehouse emerged and developed. Enjoy a rollercoaster ride through the last 4 decades, and understand the ethos of an authentic smokehouse. Frank will then join you for lunch, offering fun, informal tutored tastings, and keeping the conversation lively over sumptuous tasting platters of delicious smoked food.
Meet the Expert Epicurean Lunch Tour
A rare opportunity to go behind the scenes of this one-of-a-kind smokehouse accompanied by Frank Hederman himself. Now in his fifth decade of smoking, this renowned, self-taught artisan will advise on sourcing, curing and smoking, while giving you a blast of local history, food politics, and his culinary achievements. A gastronomic experience from the get-go, the tour culminates with lavish menus in the Tasting Room. Here, Frank will happily join you at the table, indulge any curiosities and questions, and regale you with memories, local stories and laughter.

PRIVATE TOUR GROUP TERMS & CONDITIONS
Season 2025
Our season runs from mid March to end of October.
We sometimes take out of season bookings, depending on production and availability.
Booking
Tour places for each person attending must be pre-booked in writing by email privatetours@frankhederman.com.
A booking is only confirmed when you have received approval and confirmation from the Belvelly Smoke House management team.
Belvelly Smoke House reserves the right under unavoidable circumstance to cancel group bookings at any time. If Belvelly Smoke House has to cancel, the tour fee charged will be reimbursed in full.
Children
Please mind your children when they are on our premises. This is a working smokehouse and yard.
Payment
Full payment must be made at the time of booking to secure your date.
Private group experiences are subject to minimum numbers or the equivalent in charges.
All rates include service charged at 12.5% including VAT at the current local rate 13.5%.
The service charge is shared in its entirely between smoke house employees.
Unscheduled Tours
Due to the preparation involved for private tours, we are unable to accommodate impromptu or unscheduled visits. Please contact the smokehouse via email for a private tour with Frank Hederman or Caroline Workman privatetours@frankhederman.com
Cancellation Policy
Private tours cancelled more than two full weeks in advance will be reimbursed, but will incur a discretionary administrative charge of 15%.
Tours cancelled within two weeks of taking place, but more than 72 hours’ notice, will incur a 50% cancellation fee, again discretionary.
Tours cancelled under 72 hour notice period will not be refunded.
Hederman Smoke House reserves the right, under unavoidable circumstances, to cancel group bookings at any time, in which case you will be fully refunded.
Running Late
If you are running late, please advise us by email privatetours@frankhederman.com, and by phone 00353 (0) 21 4811089. We will do our best to accommodate you.
Parking
The smoke house is located on a relatively small site and has limited space for parking and turning. The maximum size of vehicle that we can accommodate is a 16-seater Sprinter or equivalent.
Belvelly Smoke House is not responsible for theft from or damage to your car while on our premises.
Health & Safety
Due to food safety legislation, you may be asked you to complete a visitor health information questionnaire, to wear PPE (coat and a hat) and to wash hands before the tour. We would ask you to allow 5-10 minutes for this.
Please note this is a working smoke house and yard: you must mind yourself and your children when on our premises.
